And when it comes to traditional dishes, confusion is very common. You must have eaten Veg Kolhapuri, a special dish of Maharashtra which is usually prepared in Marathi families. Everyone is a fan of this dish made in Marathi kitchen. Which is usually made by mixing a little spicy and pungent spices. You can serve this dish with roti, puri, paratha or rice.

The most special ingredient of this dish is the hot red Kolhapuri chilli, which is similar to tadka in both its taste and colour. Here we are going to tell you about the ingredients and method used in Veg Kolhapuri-

Ingredients to make Veg Kolhapuri
Potato – 1
Carrot – 1
Capsicum – 1
Tomato – 3 (150 grams)
Cauliflower – 1 cup
Peas – 1/4 cup
Ginger – 1 inch piece
Green coriander – 2-3 tbsp
Cream – half cup
Dry coconut – 1/4 cup grated
Oil – for frying vegetables and making sabzi
Asafoetida – 1 pinch
Cumin – half teaspoon
Turmeric powder – 1/4 tsp
Coriander powder – 1 tsp
Red chili powder – half teaspoon
Garam masala – 1/4 tsp
Whole red chili – 2
Sesame – 1 tbsp
salt – as per taste

Veg Kolhapuri Recipe

First of all, roast all the dry spices coconut, dry Kashmiri red chillies, poppy seeds, sesame seeds, cloves, black pepper, cinnamon, black cardamom seeds in a wok or pan. Now take it out in a plate and keep it to cool down. Grind it well in a mixer.

Cut all the vegetables like beans, carrots, potatoes lengthwise, take peas, cabbage as well and boil it by adding some salt to the water. When it is 80 percent cooked, turn off the gas and keep it aside. Check once whether the vegetables have become soft or not.

Now take a pan, heat 2 tbsp oil in it on medium flame. Add fennel and fry for 15 seconds. Now add chopped onion to it and cook till it turns light pink. After the onion is fried, add garlic-ginger paste and now add capsicum to it, cook it a little and then add tomatoes and sprinkle it on top. Cook it a little and when the tomatoes melt, add the prepared masala to it. Mix this mixture well and let it cook for a while.

Now add pre-boiled vegetables to the prepared mixture. Mix all of them well in the spices and add salt as per taste. Keep stirring it continuously with the help of a spoon. Now add 1/3 cup milk and same amount of water in it. When the vegetables start to boil, mix it well again. When the gravy of Veg Kolhapuri starts getting thick, turn off the gas and add cream and mix it once again. Put coriander on top and serve hot Veg Kolhapuri with roti-naan or rice.
