Ingredients to make Achari Dahi Bhindi
Bhindi – 1/2 kg
Onion – 1
Tomato – 1
Curd – 1 cup
Ginger – 1 inch piece
Gram flour – 1 tablespoon
Turmeric – 1/2 tsp
Red chili powder – 1 tsp
Coriander powder – 1 tsp
oil – as needed
salt – as per taste

For Pickle Spice
Cumin – 1 tsp
Rye – 1 tsp
Fennel seeds – 1 tsp
Kalonji – 1 tsp
Ajwain – 1 tsp
Fenugreek seeds – 1 tsp
Dry red chili – 3-4

How to make Achari Dahi Bhindi
To make Achari Dahi Bhindi, first of all we will start the process of making Achari Masala. For this heat a pan on medium flame. Add all the dry spices including mustard seeds, cumin seeds and dry roast them for 2-3 minutes. Now let the spices cool down. When the spices cool down, put them in the mixer and grind them to make powder. Now take out the pickle masala in a bowl and keep it aside.
Now wash the okra with clean water and wipe it with a cotton cloth. After this, cut small pieces of bhindi and keep them separately. Now put oil in a pan and heat it on medium flame. After the oil is hot, add chopped okra and a little salt to it and fry while stirring. Cook the bhindi till it becomes soft. After this, take out the bhindi in a bowl and keep it.

Now put some more oil in the pan and heat it. Add onion and ginger to it and fry. Cook them until the onions become soft. After this add chopped tomato pieces and fry till soft. After this add turmeric, coriander powder, pickle masala powder, red chili powder and salt as per taste and mix it well. Cook the mixture for 3-4 minutes while stirring with a ladle.

Now take a bowl and add curd and gram flour in it and mix both of them well. After this, put this mixture in a pan and cook while mixing it with all the ingredients. Finally add fried okra to the prepared gravy and cover the pan and let the vegetable cook for 2 to 3 minutes. After this turn off the gas. Flavorful Achari Dahi Bhindi curry is ready. Garnish it with green coriander leaves and serve it.
