Material

leftover idli
Curd
salt to taste
sugar 1 tbsp

for tempering

oil 1 tbsp
Mustard seeds 1 tsp
Cumin 1/2 tsp
Curry leaf
1 green chili (chopped)
Asafoetida – a pinch

How to make curd idli

Add salt and sugar to the curd, after mixing it well, keep it in the fridge for an hour.

Heat oil for tempering and put all the ingredients in the oil

Take idli and pour curd mixture over it

Spicy Tawa Idli

Material

leftover idli
finely chopped 1/4 cup onion
Coriander leaves finely chopped 2 tbsp
some curry leaves
Gun powder / idli podi 2 tbsp
Butter (or oil) 2 tbsp

How to make Tawa Idli

Heat a griddle and add butter or oil to it.
When the oil or butter becomes hot, add onion, coriander leaves and curry leaves and fry for a minute.
After roasting, add idli podi masala and fry well for 2 minutes on medium low flame.
Add the idlis and mix well tossing in the spices and cook on both the sides.
Serve hot tawa idli with coconut chutney or enjoy it with any chutney of your choice

4 to 5 day old refrigerated idlis
Chat masala or pav bhaji masala or idli podi as per requirement
salt as needed
Oil for deep frying or shallow frying

How to make idli fries

Cut refrigerated or day old idlis like french fries

Heat oil in a wok or pan. Add idli fingers and fry till they become light golden.

The fried idli pieces should be crisp on the outside. You can also pan fry or shallow fry them. Take care that the idlis do not burn

Take out the idlis and keep them on a paper towel

Sprinkle pav bhaji masala or chaat masala or idli podi and some salt on top

Mix it well, all the fries should be covered with masala.
