1. Farali Sama Vada

for this you need

Sama rice flour 1 cup
Ghee 1 tsp
rock salt to taste
Cumin 1 tsp
White sesame seeds 1½ tbsp
Roasted unsalted peanut powder 2-3 tbsp
Green chili chopped 2-3
Chopped fresh coriander 2 tbsp
Grated ginger 1 tbsp
1 large potato, boiled and grated
oil for frying

How to make Farali Sama Vada

  • Pour 1 cup of water in a deep pan, add ghee, rock salt and cumin seeds and mix. Add the boiling sama rice flour and mix well. Sprinkle 2-3 tbsp water, cover and cook for 3-4 minutes. Pour the mixture into a large bowl. Let it cool down a bit.
  • Add white sesame seeds, groundnut powder, green chillies, coriander leaves, ginger and potatoes and mix well. Take small portions of the mixture and shape each portion into a ball. Flatten it slightly and give it the shape of a vada.
  • Heat oil in a pan. Gently add the vadas a little at a time and fry till golden brown and crisp. Take out on absorbent paper. If you don’t want to deep fry it, you can also shallow fry it on a pan like a tikki.
  • Place the vadas in a serving plate. Serve hot with curd.

2. Potato pudding

for this you need

Ghee ½ cup
Raisins 2 tbsp
Cashew nuts 2 tbsp
Almonds 8-10
3 large potatoes, boiled and mashed
Grated Mawa/Khoya ½ cup
sugar ½ cup
milk ¼ cup
Green cardamom powder ½ tsp
a pinch of saffron
chopped pistachios for garnish

How to make potato pudding

  • Heat ghee in a non stick pan, add raisins and cashews and fry till they turn golden brown. Add almonds and fry for a minute.
  • Add potatoes, mix and fry for 2-3 minutes. When the potatoes are fried, add mawa, sugar, milk and small cardamom powder to it and mix and fry for 4-5 minutes.
  • Add saffron and mix, cook for 1-2 minutes. Take the pan off the heat and transfer it to a serving bowl.
  • Garnish with chopped pistachios and saffron.

3. Water chestnut flour cheela

for this you need

Water chestnut flour 1 cup
green coriander leaves finely chopped
rock salt as per taste
water ½ cup
Cumin 1 tsp
Black pepper powder ¼ tsp
Ghee

How to make water chestnut flour cheela

  • Put water chestnut flour in a bowl, add green coriander, salt, cumin, black pepper and mix it well.
  • a thik by pouring water into it Prepare the batter. Leave it covered for 10 minutes.
  • Heat a griddle, pour ghee on it and spread the batter on the griddle. Cook well till it turns brown from both the sides.
  • Serve hot cheela with curd.
