To make Kuttu ki Khichdi you will need

Buckwheat – 1 cup
Peanuts – 1/4 cup roasted (coarsely ground)
Ghee – 4 spoons
Cumin – 1/4 tsp
Green chili – 2 (finely chopped)
Ginger – 1 inch (grated)
Potato – 2 (cut into small pieces)
Sugar – 1/2 tsp
Rock salt (as per taste)
Green Coriander – 4 tsp (finely chopped)
Water

Prepare Buckwheat Khichdi in this way

First of all put a pan on medium flame. Add ghee to it and when the ghee becomes hot, add cumin seeds.

Then add green chilies and ginger and fry for 20 to 30 seconds.

Now add potato pieces to it and fry it well for 2 to 3 minutes.

After that put coarsely ground peanuts in it. Now fry it too for about 30 seconds.

Here wash the buckwheat well and put it in the pan. Now fry all the ingredients together for 1 to 2 minutes.

Then add sugar and rock salt to it. And pour water on top.

Cover the pan. Keep stirring the khichdi by removing the lid in between.

Then when the khichdi absorbs all the water and the buckwheat gets cooked well. So in the end add coriander leaves and stir it one last time and turn off the gas.

Your buckwheat porridge is ready, squeeze lemon over it and serve hot.
