Ingredients to make Rajasthani Kadhi
Curd – 1 cup
Gram flour – 2 tbsp
Turmeric – 1/4 tsp
Red chili powder – 1/2 tsp
Rye – 1/2 tsp
Fenugreek seeds – 1/2 tsp
Dry red chili – 2
Asafoetida – 1/4 tsp
Green chili – 1
Ginger-garlic paste – 1 tbsp
Green coriander – 1 tbsp
Desi ghee – 1 tbsp
salt – as per taste

Rajasthani Kadhi Recipe
To make Rajasthani style Kadhi, first put curd in a utensil and mix well by adding a little water to it. Now add 2 tbsp gram flour to the curd and beat it well. Keep in mind that the mixture has to be whisked well so that no lumps are formed. After this add red chili powder, turmeric powder and salt as per taste to the mixture and mix. Then keep this mixture aside.

Now put 1 tablespoon of desi ghee in a pan and heat it. When the ghee melts, add mustard seeds, fenugreek seeds, whole red chilies and asafoetida and fry them well. After this add ginger-garlic paste and cook for 1 minute while stirring. When the spices start to smell, put the prepared mixture of curd in it and let it cook while stirring with a big spoon. Now cover the pan and let the curry cook on medium flame. After boiling the curry for 10 to 15 minutes, turn off the gas. Flavorful Rajasthani Kadhi is ready. Serve it hot with rice or roti. If you want, you can also take out the pakoras and put them in the curry.
