Urad Dal – half kg
Ginger grated – 1 tsp
Kashmiri chili powder – 2 tsp
Green chili chopped – 1 tsp
Coriander leaves – 1 cup
Cumin coarsely ground – 1 tsp
Roasted cumin powder – 4 tbsp
Asafoetida – 1/2 tsp
Chaat masala – 2-3 tsp
black salt – as per taste
Cashew nuts chopped – 1/2 cup
Raisins – 1/2 cup
Pomegranate seeds – 2-3 tbsp
Sweet curd – 1 cup
Tamarind Chutney – as needed
oil – as required
Plain salt – as per taste

How to make Dahi Bhalla
To make Dahi Bhalla, first clean the urad dal and after washing, soak it for 2 to 3 hours. After the fixed time, take out the urad dal from the water and put it in a utensil and add asafoetida to it and mix it well. Now with the help of a mixer, grind the urad dal until smooth and prepare a paste. Now put the prepared paste in a big utensil. After this beat the paste so much that it becomes light and shiny.
After this add ginger, coriander, green chillies, cashews, raisins, roasted cumin to the paste of urad dal and mix well. After this, mix salt according to taste in the mixture. After this, put oil in a pan and heat it on low flame. Meanwhile, apply some oil on your hands and after the oil in the pan is hot, make bhallas out of lentil paste and put them in the pan and deep fry them.

Bake the bhallas by turning them till they turn golden brown in color from both the sides and puff up on top. Similarly deep fry all the bhallas. Before this, put water and a little salt in a vessel and boil it. When the balls are fried, put them in salt water and leave them for some time. This will make the balls soft and the extra oil present in them will also come out. Similarly prepare all the balls.
