Ingredients for Anjeer Malai Kofta
Potatoes boiled – 2
Paneer – 100 grams
Figs (soaked) – 4
Green chili – 2
Green coriander – 2 tbsp
Red chili powder – 1/4 tsp
Turmeric – 1/4 tsp
Corn flour – 1 tbsp
Oil – for frying
Cashew – 1 cup
Cream – 1 cup
Curd – 1/2 cup
Melon seeds – 1/3 cup
Desi ghee – 1 tsp
Ginger paste – 1 tsp
Ilyachi – 1/4 tsp
Sugar – 1 tsp
Cumin – 1 tsp
Garam masala – 1/4 tsp
Coriander powder – 1 tsp
Whole garam masala – as needed
salt – as per taste

How to make Anjeer Malai Kofta
If you want to make Anjeer Malai Kofta on Valentine’s Day, first boil and peel the potatoes and mash them in a big mixing bowl. Now grate the paneer and mix it well with the potatoes. Mix green coriander, corn flour, black pepper in it and prepare a smooth mixture by mashing it well. After this, take soaked figs and cut them into small pieces.
Now take a little mixture in your hand and make it round. After this, make it like a bowl by pressing it and keep 3-4 fig pieces in it, close it and make it round again. Keep it aside in a plate. Similarly make fig koftas one by one from all the mixture.

Now put oil in a pan and heat it on medium flame. After the oil is hot, add fig koftas and deep fry them. Fry them until the color of the koftas turns golden brown, after that take them out in a plate. Fry all the koftas in the same way and then keep them separately in a vessel.
Now start the process of making gravy for Kofta. For this, first prepare a paste by putting cashew and melon seeds in the mixer. Before making paste, soak cashew and melon seeds in hot water for half an hour. Now take whole garam masala and grind them to prepare thick masala. After this, put some oil in a pan and heat it on medium flame.

When the oil becomes hot, add cumin and crushed garam masala and fry. Add ginger-chilli to it and fry for a few seconds. When the masala starts giving aroma, add cashew-melon seed paste and cook. It has to be cooked till the oil separates from the gravy. After this add cream to the gravy and fry while stirring until the oil separates again.
Now add red chilli powder, coriander powder to the gravy and add curd on top and cook the gravy till it starts boiling while stirring with a spoon. Add water according to your liking in the gravy and keep cooking it while stirring till it starts boiling. Then add sugar, green coriander and salt as per taste to the gravy and cook for 2 more minutes. After the gravy is ready, put fig koftas in it before serving and cover it for 2-3 minutes. After that Anjeer Malai Kofta is ready to serve.
