Ingredients to make Sabudana Khichdi
Sabudana – 1 cup
Chopped boiled potatoes – 1
Peanuts – 1/2 cup
Green chili chopped – 2
Green coriander chopped – 1 tbsp
Curry leaves – 5
Cumin – 1 tsp
Lemon – 1
Ghee/Oil – 1 tbsp
Rock salt – as per taste

How to make Sabudana Khichdi
To make Sabudana Khichdi, first clean the Sabudana and then soak them in water for at least 2 hours. In this time the sago will swell and become soft. Now put peanuts in a pan and dry roast them while stirring on low flame. When the grains are well roasted, turn off the gas and grind the grains with the help of a mixer. Keep in mind that the peanut grains should not be too fine. If desired, you can also grind peanuts.

Now boil the potatoes and peel them and cut them into thick pieces. Now put oil in a pan and heat it on medium flame. When the oil becomes hot, add cumin, chopped green chillies and curry leaves and fry for some time. After this add chopped boiled potatoes and cook while stirring with a spoon. When the potatoes are fried well, add soaked sago and mix it well and fry it. Now cover the pan and cook the khichdi for 5 minutes.

During this, keep stirring the khichdi in between so that it does not stick to the pan. Now add crushed peanuts and rock salt to the khichdi and mix. Switch off the gas after 1 minute. Now put lemon juice and green coriander leaves in the khichdi. Flavorful Sabudana Khichdi is ready. Serve it with curd or raita.
