Ingredients for making jaggery-tamarind chutney
Tamarind pulp – 1/2 cup
Jaggery – 1 cup
Fennel seeds – 1/2 tsp
Red chili powder – 1 tsp
Sugar – 1 tsp
salt – as per taste

How to make Jaggery-Tamarind Chutney
To make jaggery and tamarind chutney, first take a bowl and fill it with water and add tamarind pulp. Let the tamarind remain in the water for some time, after that mash the pulp well under the water. Now take another bowl and add jaggery to it and mix it with water. After some time the jaggery will start melting. After this, mash the jaggery with your hands. Now keep both the bowls separately.

Keep a pan on medium flame to heat it. After the pan is hot, add tamarind pulp water and cook it. After cooking for some time, the tamarind pulp will start boiling. Then mix jaggery with water in it. Now while stirring with a ladle, cook this mixture for some time. Then add red chilli powder, sugar and salt as per taste and mix. After a few minutes, the chutney will start to boil.

Cook till the chutney starts boiling once or twice. After this add fennel and mix it. Now cook the chutney for about 1 more minute, then turn off the gas. Jaggery-tamarind chutney full of taste and nutrition is ready. It can be eaten with snacks.
