Ingredients for making green onion curry
Green onion – 1/2 kg
Potato – 2
Tomato – 2
Green chili – 2-3
Garlic – 5-6 cloves
Ginger – 1/2 inch piece
Turmeric – 1 tsp
Red chili powder – 1 tsp
Garam masala – 1/2 tsp
Coriander powder – 1 tsp
Fenugreek seeds – 1/2 tsp
Green coriander leaves – 1-2 tbsp
Oil – 2 tbsp
salt – as per taste

How to make green onion curry
If you want to make green onion curry for lunch or dinner, first clean the potatoes and green onions and cut them into small pieces. After this finely chop ginger, garlic, green chillies and coriander. Now put oil in a pan and keep it on medium flame to heat. After the oil is hot, add fenugreek seeds to it and fry for a few seconds. After the fenugreek seeds turn brown, add turmeric, ginger, garlic, green chillies to the pan and stir.

After roasting them for some time, put the chopped potatoes in the pan and cook them. Fry the potatoes while stirring and when the potatoes become soft, add chopped green onions and mix well with the help of a spoon and let the vegetable cook. Now cover the pan and let the vegetable fry for a while. Stir the vegetable after some time and then add red chilli powder, coriander powder and garam masala and mix it well.

Now cut tomatoes and put them in the vegetable and cook while stirring. After this, mix salt according to taste in the vegetable. Now cover the vegetable again and let it cook for some time. When potatoes, onions, tomatoes become soft properly, remove the lid from the pan and turn off the gas after adding green coriander leaves. The flavourful green onion curry is ready. It can be served with roti or paratha.
