Ingredients to make Besan Burfi
Gram flour – 3 cups
Semolina – 2 tbsp
Desi ghee – 1 cup
Saffron food color – 1 pinch
Cardamom powder – 1/2 tsp
Pistachio Chopped – 1 tbsp (optional)
Sugar – 1.5 cup (as per taste)

Besan Barfi Recipe
To make delicious gram flour barfi, first put 1 cup of ghee in a pan and heat it on medium flame. When the ghee melts, put 3 cups of gram flour in it and mix gram flour and ghee while stirring with the help of a ladle. Keep stirring the gram flour for at least 2 minutes. After this, put 2 tbsp semolina in the pan and mix it well. Now slow down the flame of the gas and fry this mixture while stirring until its color turns light pink.

It may take 25 to 30 minutes to roast gram flour properly. After this gram flour will start leaving ghee. After this, turn off the gas and take out the gram flour in a vessel. Now put one and a half cup of sugar and half a cup of water in a big pan and heat it. Dissolve the sugar well in water and boil it until a single string syrup is formed. After this, mix a pinch of saffron food color in the sugar syrup.

Add roasted gram flour to the syrup, mix well and after cooking for a while, turn off the gas. Keep mixing gram flour with sugar syrup until the mixture becomes homogeneous. After this, take a plate/tray and apply some ghee on it and make it smooth. Pour the prepared mixture in the tray and spread it evenly all around. Sprinkle pistachio shavings on top. Keep the barfi aside for half an hour to set. After this cut it into desired shape with the help of a knife. Tasty gram flour barfi is ready. Feed it to the guests.
