Ingredients for making Besan Gatte curry

for bundle
Gram flour – 1 cup
Curd – 2 tbsp
Kashmiri red chili – 1/4 tsp
Turmeric – 1/4 tsp
Coriander seeds – 1/2 tsp
Ajwain – 1/4 tsp
Asafoetida – 1 pinch
Desi ghee – 2 tbsp
salt – as per taste

for gravy
Onion finely chopped – 1
Whipped Curd – 1 cup
Cumin – 1 tsp
Fennel seeds – 1/2 tsp
Kasuri fenugreek – 1 tsp
Ginger-garlic paste – 1 tsp
Kashmiri red chili – 1 tsp
Coriander powder – 1/2 tsp
Cumin powder – 1/4 tsp
Garam masala – 1/4 tsp
Asafoetida – 1 pinch
Bay leaf – 1
Green coriander chopped – 2-3 tbsp
Oil – 2 tbsp
salt – as per taste

How to make Besan Gatta curry
To make Besan Gatta curry, first put gram flour in a big bowl. Add crushed coriander seeds, celery, red chili powder, turmeric, a pinch of asafoetida and mix it. After this add 2 tbsp desi ghee, curd and salt as per taste to the gram flour and mix it well and prepare the dough. Keep in mind that the dough should be soft after mixing well. Knead the dough by adding 2 tbsp water to it.
It has to be kneaded while mashing it until the dough becomes very soft. If you knead the dough with oil in your hands, it will not stick. Now take a little dough and roll it into a roll. After this, put water in a big pot and boil it. After the water starts boiling, put the prepared cylindrical balls in it. Boil it for 10-12 minutes, so that the Gattes become soft properly. After this filter the balls and keep them in a plate.

Now start the process of making gravy. For this, put 2 tablespoons of oil in a pan and heat it. After the oil is hot, add whole cumin, bay leaf, fennel, kasoori fenugreek and a pinch of asafoetida and fry. After roasting for some time, add finely chopped onions to the spices and cook while stirring. When the onion turns golden brown, add garlic-ginger paste and fry it.

After this add turmeric, red chili powder, cumin powder and coriander powder to the pan and mix it well. Cook the spices on low flame. After some time put 1 cup of water in the pan. If you want, you can use the water of boiled gatta. Now put 1 cup curd in the pan and let the gravy boil well. During this, keep stirring the gravy continuously.

When the gravy starts boiling, add gram flour in it and mix it well with the help of a ladle. After this add salt as per taste and cook the vegetable covered for 10 minutes. When the gattes are boiled well with the gravy, the gravy will be absorbed well in them. Then add garam masala and green coriander leaves to the vegetable and mix. After cooking for 1-2 minutes, turn off the gas. The flavourful Besan Gatte curry is ready. Serve it with roti, naan or rice.
